This hot and toasty Italian sausage sandwich is bursting with flavor. Spicy peppers and sausage mingle with savory Italian spices and homemade marinara sauce for the best lunch or quick dinner.

A sausage sandwich with a grilled hoagie roll is sure to have your family running to the table. It's kind of built like an Italian style sausage roll. It's meaty and filling like my tripleta sandwich recipe and cold cut sub sandwich but with an Italian twist.
Finding something everyone will like can be a struggle, but these familiar flavors combined in a new way will delight both kids and adults.

Ingredients

- yellow onion - Yellow onion is best for cooking but you can also use white onion if that is what you have on hand.
- balsamic vinegar - Adds nice flavor and acidity to the sautéed vegetables.
- red bell pepper - Red bell pepper is the most common for this recipe, but you can substitute with green bell pepper if needed.
- tomato paste - To help thicken the sauce.
- Italian sausages - Hot or mild, pick your favorite.
- hoagie rolls - Or brat buns. If you're in Canada, they're usually referred to as sausage buns.
- oregano - You can substitute the dried oregano with fresh oregano leaves but you will have to add a bit more because the flavor of the dried herb is more concentrated.

Chef's Note: If your table is mostly adults, don't be afraid to pick up the spicy sausage. A little kick pairs nicely with the bitingly sweet balsamic vinegar. Speaking of spicy sausage, you might also like my pickled smoked sausage recipe.
How to Make an Italian Sausage Sandwich

Step 1. Make the sauce. Sauté the onion and garlic in a small saucepan. Add the other sauce ingredients and simmer until it thickens, about 15 minutes. Season to taste.

Step 2. Cook the Italian sausages. Cut the sausages lengthwise and grill them on a hot grill pan for about 2 minutes per side, until fully cooked.

Step 3. Toast the buns. Open up the buns and grill them on the open side until lightly toasted so that they don't get soggy when you add the sauce!

Step 4. Assemble and serve. Assemble the sandwiches with the sausages, bell pepper marinara sauce and fresh oregano. Slice and serve!
What Goes with Italian Sausage Sandwiches?
- Pair with chips or fruit for a filling lunch or serve with oven baked hasselback potatoes and a burrata cheese salad for an easy and tasty full dinner.
- The only thing that could make this flavorful sub any better is if you have some mozzarella on hand. Stuffing in some melty cheese will bring this sandwich to the next level.
- However, if you're sensitive to dairy, leave off the cheese and enjoy the sautéed peppers and onions.
- You could also try grilling your peppers for a smoky flavor enhancement.
Joss' Tips
- Toast the buns. Toasting the rolls is an absolute must for this recipe just like I do with this bacon butty sandwich. We want to avoid a soggy sandwich from the saucy filling and it adds a nice crispiness to the meal. 🍞 You can also use a toaster oven if you don't have a grill pan or the 'bagel option' on your toaster (if it's big enough for the buns).
- Make ahead option. The bell pepper marinara sauce can be cooked ahead of time and reheated on the stove when you're ready to eat.
Italian Sausage Sandwich FAQs
The cooked sausage and bell pepper sauce can last up to 3 to 4 days in the fridge, in an airtight container. I like to store the buns in the freezer until a few hours before serving so that they stay fresh.
This sandwich is best served immediately. But, if you have leftovers, just pop the sausage and sauce into the microwave and toast up a fresh bun. You can also reheat the sausage/sauce on the stove over medium heat.
