    🔆The Perfect Summer Appetizer

With the combination of refreshing, sweet melon and delicately salty prosciutto, not only will each bite be delicious, but also satisfying and perfect for summer gatherings, parties, or as a sophisticated snack!

To top it off, this appetizer is about as simple and easy as you can get without sacrificing an ounce of robust flavor.

Each skewer is aesthetically layered with melon pieces of your choice and slices of prosciutto (quite similar to my grilled prosciutto wrapped peaches), along with fresh greens. I absolutely love the mix of fruit and meat in this balanced hors-d'oeuvre.

Serving food on skewers never seems to go out of style, whether for a meal or appetizer, and that concept certainly applies to this recipe. After all, skewers allow for a great combination of flavors as well as easy preparation. I also have these mini caprese skewers and grilled mango skewers you might like!

    🍈Melon Prosciutto Skewer Ingredients

Melon prosciutto skewer ingredients prepped and labeled.
    • melon - With this appetizer, simply select your melon (watermelon or cantaloupe both work wonderfully!), and slice it into square, bite-size pieces. I have a tutorial for how to cube a cantaloupe.
    • olive oil - Use a high quality, extra virgin olive oil for best results to enhance the flavor. This is used to slightly moisten the greens.
    • prosciutto - Prosciutto is a type of dry-cured ham that is typically thinly sliced and served uncooked. It is known for its rich flavor and melt-in-your-mouth texture. It has the perfect saltiness to balance out the sweetness of the melon. Prosciutto di Parma is a type of high-quality prosciutto that is produced in the Parma region of Italy.
    • greens - Use your favorite salad greens: can be romaine, green leaf lettuce, iceberg, etc. You could even use a fresh herb--basil leaves are a popular choice.

*Check recipe card for ingredient amounts.

⭐Pro Tip: You could even use an ice cream scoop to create melon balls instead of cubes if you find that easier!

    📖Tweaks

These skewers are delicious just as the recipe is written, and they can also be easily customized by adding other ingredients such as mozzarella balls (like I do with my caprese starter salad), olives or avocado chunks.

    🔪How to Make Them

Diced greens in bowl and bottle of olive oil.

Step 1. In a large bowl, mix the finely chopped greens with a bit of olive oil, until slightly moistened.

💬Chef's Note: Careful not to oversoak them to avoid soggy greens. Start with a small amount of olive oil and work your way up.

Melon cube with prosciutto slice and shredded greens.

Step 2. Roll up a prosciutto slice. Top one melon cube with the prosciutto and some of the greens.

Cantaloupe cube, prosciutto and greens layered with skewer/toothpick.

Step 3. Stick a skewer through it. Repeat for all of the skewers.

Step 4. Transfer the assembled melon prosciutto skewers to a serving tray and serve!

    👩🏻‍🍳Joss' Tips

    • Skewer Choice: Use small wooden or bamboo skewers, toothpicks, or cocktail picks.
    • Selecting the Melon: Choose a ripe melon. It should have a sweet aroma and yield slightly to pressure at the ends.
    • Prosciutto thickness: Use thinly sliced prosciutto. If the slices are too thick, they can overpower the melon's flavor or be too full of a bite.
    • Presentation: Arrange the skewers neatly on a serving platter.
    • Chill: Keep the assembled skewers chilled in the fridge until ready to serve. This helps keep the melon fresh and the prosciutto firm.

    ❓Recipe FAQs

Can you make them ahead of time?

These summer skewer appetizers are best served shortly after preparation so they stay fresh, but they are very easy and quick to make. You can do some make head prep such as cube the melon and finely chop the greens ahead of time. You can assemble them a few hours in advance and refrigerate until serving time.

How do you store leftover melon?

If you have leftover melon cubes, store them in an airtight container in the fridge for up to 3 to 5 days.

How do you store leftover greens?

If you have leftover greens, they can be stored in the fridge for up to 1 day and can be used as a salad so that they aren't wasted.

How do you store leftover assembled melon prosciutto skewers?

The assembled skewers can also be stored in an airtight container in the fridge for up to 1 day.

How about using basil for the greens? Maybe a mozzarella pearl to top it?
