Blueberry Mojito Mocktail

For the Blueberry-Lime Sugar Syrup:
2 ½
cups
fresh blueberries

white sugar

water

lime juice
For the Mojito:
½
lime
cut into small wedges
2-3

blueberry-lime sugar syrup (from above)
or to taste

fresh mint leaves

Instructions
For the Blueberry-Lime Sugar Syrup:
Add the blueberries, sugar, water and lime juice to a saucepan. Bring to a boil over medium-high heat.
2 ½ cups fresh blueberries,
1 cup white sugar,
1 cup water,
2 tablespoons lime juice
Reduce the heat to medium-low and simmer for 20 minutes.
Strain the syrup through a fine mesh sieve to remove the fruit and let it cool. Reserve.
For the Mojito:
Muddle the lime wedges and sugar syrup in a tall glass to release the juices.
½ lime,
2-3 tablespoons blueberry-lime sugar syrup (from above)
Add the mint leaves and gently muddle them.
10 fresh mint leaves
Add the blueberries. Fill the rest of the glass with ice.
¼ cup fresh blueberries
Top the glass with club soda. Gently stir with a long-handled spoon to combine all of the ingredients.
Slap the mint sprig in your hand a couple of times to release the aroma. Garnish the glass with the mint sprig and serve!
Notes
This recipe makes about 2 cups sugar syrup. The leftover syrup can be refrigerated in a squeeze bottle or jar.
