Heat electric skillet to 400ºF and add the olive oil.

Sauté the peppers in the skillet for 2 minutes. Reserve.
½ red bell pepper
Cut the puff pastry sheet into 9 equal squares.

Fill them with the peppers, goat cheese, salt and pepper on one diagonal half.

Fold them over to make triangles, pressing the sides together as good as you can.
Place them in a small baking dish or sheet that fits in your electric skillet. Brush them with the egg, using a pastry brush.

Place a small baking rack in the skillet and place the baking dish on top, so that the baking dish doesn’t touch the bottom of the skillet. (Alternatively, you could place a few metal skewers on the bottom of the skillet and then place the baking sheet on top. This is helpful if you can’t fit the lid over the baking sheet.)
Cook them with the lid securely on the skillet for 25 minutes. Turn them over and cook 10 more minutes - or until golden on both sides.
Let cool for a few minutes and serve.
Notes
You will need to find a small baking rack and baking dish that fit in your electric skillet.
This savory, electric skillet appetizer goes well with dips that are more so on the sweet side like sweet and sour, sweet chili sauce or even cranberry sauce.
Store leftover triangles in the refrigerator in an airtight container for up to 3 to 5 days. You can also freeze them for a couple of weeks.
They can be reheated in the electric frying pan, microwave or oven. If you reheat them in the microwave they will be soft, whereas the oven/pan will make them nice and crispy again!
