St. Patrick's Day Electric Skillet Beef & Black Beer Stew
Try out this amazing take on a St. Patrick's Day electric skillet beef and black beer stew to celebrate the holiday.
- 3 tbsp. olive oil divided
- 2.5 lbs. sirloin steaks cut into big pieces
- 1 onion chopped
- 4 celery stalks chopped
- 1 carrot chopped
- 8 oz. bacon chopped
- 2 garlic cloves minced
- ¼ cup flour
- ¼ cup tomato paste
- 3-4 cups beef broth
- 3 bay leaves
- 1 can Guinness beer or other black beer
- Salt and pepper
- Fresh dill to garnish
Heat the electric skillet to medium-high heat (375ºF).
Add 2 tbsp. olive oil and the beef. Fry beef until golden brown on all sides and reserve.
Lower heat to medium (300ºF).
In the same skillet, add the remaining 1 tbsp. olive oil, onion, celery, carrots, bacon and garlic. Cook for 2 minutes.
Add the flour and tomato paste and mix it around. Add 3 cups beef broth and the bay leaves. Return the beef to the skillet.
Pour in the black beer.
Cover and cook for about 40 minutes at low heat (200ºF) - if it starts to dry out, you can add more of the broth.
Discard bay leaves. Season with salt and pepper, if needed. Serve topped with fresh dill.
