Crisp and refreshing, this blueberry mojito mocktail dazzles your senses with sparkling water, fresh blueberries and cooling mint to create a mouth-watering summer drink.
Add the blueberries, sugar, water and lime juice to a saucepan. Bring to a boil over medium-high heat.
2 ½ cups fresh blueberries, 1 cup white sugar, 1 cup water, 2 tablespoons lime juice
Reduce the heat to medium-low and simmer for 20 minutes.
Strain the syrup through a fine mesh sieve to remove the fruit and let it cool. You can use the back of a spoon to push on the fruit and get all of the juices out. Reserve.
For the Mojito
Muddle the lime wedges and sugar syrup in a tall glass to release the juices.
½ lime, 2-3 tablespoons blueberry-lime sugar syrup (from above)
Add the mint leaves and gently muddle them.
10 fresh mint leaves
Add the blueberries. Fill the rest of the glass with ice.
¼ cup fresh blueberries
Top the glass with club soda. Gently stir with a long-handled spoon to combine all of the ingredients.
Slap the mint sprig in your hand a couple of times to release the aroma. Garnish the glass with the mint sprig and serve!
Notes
This recipe makes about 2 cups sugar syrup.
The leftover syrup can be refrigerated in a squeeze bottle or jar.
For best results use fresh ingredients, including the limes, blueberries and mint.
Choose mint leaves that are firm (not wilting) and evenly green without dark spots.
Make sure you don't over-stir the drink: the fruit and leaves should float attractively in the water, not get crushed inside the glass.
