Peaches and sparkling wine combine for a flavor like no other in this 2 ingredient cocktail! This easy peach Bellini recipe brings the traditional taste of the classic cocktail with a bit of a twist, perfect for ringing in the new year.
Blend the peaches (with the syrup) until smooth. Pour the mixture into an ice cube mold.
Let them freeze for about 1 hour. When they start getting hard, insert mini skewers/cocktail picks into the center of each cube.
Let them freeze for another hour (or until completely solid). It might take a little longer depending on your ice cube tray and freezer.
Pour 4 ounces of sparkling wine into each Champagne flute. Insert the frozen peach skewers and enjoy!

Make ahead. Having a party? you can easily prep the iced peaches ahead of time. Then, all you need to do is pop a peach skewer into the bottom of a flute glass and top with sparkling wine.
Master the pour. Begin with chilled champagne and glasses. Hold the champagne flute at a slight angle and slowly straighten as you pour. This will help preserve bubbles and avoid excess foam.
Peach ice cubes storage. The frozen peach purée cubes can be stored in the freezer for about 8 to 12 months, meaning you can prepare them way in advance. Be sure to cover them well to help avoid ice crystals. You can remove them from the ice cube tray, wrap with plastic wrap and transfer to a freezer bag.
Straws. If you decide to use cocktail straws instead of the wooden skewers/picks to make the peach pops, you can use them to sip up the Bellini once the ice pops have melted!
