Heat the electric skillet to 300ºF. Combine the flour, baking powder and salt together.
Melt the butter in a microwave (or you could use the electric skillet if you don't have access to one). Once it’s melted, transfer to a bowl and add the cinnamon.
Add the oil, egg, vanilla and brown and white sugars to the butter. Mix well.
Add the flour mixture to the butter mixture and mix with a wooden spoon until well combined. Add the oats and pecans and mix well.
Divide the dough into 1 tablespoon portions and arrange them in the electric skillet (around 2 inches apart). Flatten them a little with a spatula.
Cover and bake until golden on the bottom and the edges start to firm up, about 8 minutes (if it's not easy to flip them, they are not quite ready). Flip them, cover again and bake 6 more minutes or until golden brown and baked through.
Cool on a wire baking rack. Serve and enjoy!
Notes
If the bottoms are browning too quickly, you can turn the heat down a little.
Once cooled, store in airtight containers for up to 1 to 2 weeks at room temperature.
