Notes
Olive Oil Amount: Careful not to oversoak them to avoid soggy greens. Start with a small amount of olive oil and work your way up.
Skewer Choice: Use small wooden or bamboo skewers, toothpicks, or cocktail picks.
Prosciutto thickness: Use thinly sliced prosciutto. If the slices are too thick, they can overpower the melon’s flavor or be too full of a bite.
Presentation: Arrange the skewers neatly on a serving platter.
Make Ahead Tips: These summer skewer appetizers are best served shortly after preparation so they stay fresh, but they are very easy and quick to make. You can do some make head prep such as cube the melon and finely chop the greens ahead of time. You can assemble them a few hours in advance and refrigerate until serving time.
Leftover Melon: If you have leftover melon cubes, store them in an airtight container in the fridge for up to 3 to 5 days.
Leftover Greens: If you have leftover greens, they can be stored in the fridge for up to 1 day and can be used as a salad so that they aren't wasted.
Leftover Assembled Skewers: The assembled skewers can also be stored in an airtight container in the fridge for up to 1 day.
