This tropical passion fruit mojito recipe makes a whole pitcher of mojitos, making it perfect for a pool party, backyard barbecue or any summer gathering where you're looking to serve up some delicious cocktails.
Cut the passion fruits in half and scoop out the seeds and pulp.
8-10 purple passion fruits
Pour the pulp and seeds into a fine metal strainer over top of a mixing bowl.
Use a wooden spoon or spatula to push the pulp through the strainer, leaving the seeds behind. Extract as much juice as you can. This will form a passion fruit purée. You should have about 1 cup to 1 ¼ cups purée.
Combine the sugar, passion fruit purée, ginger powder and lime juice in the bottom of a pitcher (or punch bowl). Mix well.

Pour the rum and soda water over top and stir gently to combine.

Fill some glasses with crushed ice. Pour the passion fruit mojito over the ice and garnish with mint leaves and extra passion fruit, if desired. Serve immediately.

Notes
Fruit variation: If you don't have passion fruits, this also works with 2 mangoes, peeled, pitted and puréed (blended together). You can also substitute with premade passion fruit purée, but it won't be as fresh and it really isn't hard to do yourself.
Passion fruit ripeness: You know passion fruits are ripe when they are plump and dark purple. They are at their sweetest when they are slightly wrinkled vs. smooth-skinned.
Simple syrup substitute: If you have simple syrup on hand, you can use it as a substitute for the sugar. You will only need about ⅓ cup or you can sweeten to taste.
Ice tip: Adding the ice to the drinks instead of the pitcher prevents the drink from being watered down. If you prefer to add the ice to the punch bowl, use large ice cubes, an ice block or an ice ring because they will melt slower than small ones.
Fizziness: The fizziness of the drink will start to fade after a few hours so keep that in mind. You might want to hold off on the soda until serving time.
Make ahead tip: If you want to make the purée ahead of time, it should last up to 2 to 3 days in the fridge.
For just one or two mojitos: use 2 to 3 passion fruits, 2 tablespoons sugar, ½ lime, 1 dash ginger powder, ¼ cup white rum, 1 cup club soda and a few mint leaves.
