Put breakfast in the spotlight when you fix an all time favorite with a delicious new twist: this French toast with a cinnamon apple topping.
It is simple enough to add to your regular weekly menu. Perhaps a Saturday or Sunday brunch or even a “breakfast for dinner” night that will bring happy smiles all around your table.
My family and I personally like to enjoy it on a Sunday morning when we have time to really savor the taste, instead of our usual electric skillet pancakes.
The flavors of this apple-flavored French toast kind of remind me of an apple crisp but more suitable for breakfast.

For the Cinnamon Apple Topping:
- 1 tablespoon butter
- 1 apple - cored, peeled and sliced
- ½ tablespoon brown sugar
- ½ tablespoon cinnamon
- ¼ cup raisins
- 1 tablespoon water
For the French Toast:
- 4 eggs
- ¼ cup low fat milk
- ½ tablespoon cinnamon
- ½ tablespoon sweetener - white sugar, brown sugar or maple syrup
- 1 tablespoon butter
- 4 slices whole-wheat bread
- maple syrup - to serve
How to Make it
This version of French Toast is easy and delicious. In fact, you can heat the apple topping while the toast is browning, cutting your preparation time down.
- Make the apple topping. Heat a small saucepan over medium-low heat. Add the butter, apple slices, brown sugar, cinnamon, raisins and water. Cover and cook for about 5 to 10 minutes, or until the apples are soft. Set aside.
- Combine ingredients. Add the eggs, low fat milk, cinnamon and sweetener to a shallow dish and mix with a fork to combine.
- Cook the French toast. Melt the butter in a non-stick pan over medium heat. Dip one bread slice into the egg mixture and turn it over, until it absorbs the liquid. Place the bread slice in the pan and cook for about 2 minutes on each side (depending on the desired doneness and the thickness of the bread slices). Repeat with the other bread slices.
- Serve. Serve with the the cinnamon apple topping and maple syrup.
I also like stuffing my French toast with Nutella.
