    Mango Ginger Cocktail

    This mango ginger cocktail has summer written all over it with its bright fruity flavors paired with dark rum and ginger for some bite. It is inspired by my grilled mango skewer recipe and can be garnished with the mini skewers for a summery cocktail that you and your guests will love.

    After a long winter with loads of snow, this mango ginger was just what I needed to get me in the mood for hot, summer days!

    The recipe for this fun cocktail actually comes from the marinade for these grilled mango skewers, with a few tweaks. If you like the spicy bite you get from fresh ginger, you will love this drink!

    Mango Ginger Cocktail Ingredients

    • dark rum - Dark rum is aged in oak barrels for long periods. It has a deep, smoky flavor.
    • lime juice - Freshly squeezed.
    • agave nectar - I love the taste of agave nectar and it blends so well into drinks--just as well as a simple syrup, but it comes from the agave plant.
    • mango juice - 100% with no added sugar. Sometimes mango juice will actually be a blend of mango and other juices like apple and/or pear if you look at the ingredients list. That is okay because mango is the main flavor in it but try to find juice without added sugar.
    • fresh ginger - I love the bite of fresh ginger in this drink.
    • grilled mango mini skewer + lime wedge or slice - This is an optional garnish.

    How to Make it

    Step 1. Fill with ice. Fill a cocktail glass with ice.

    Step 2. Add ingredients. Add the dark rum, lime juice, agave nectar, mango juice and ginger.

    Step 3. Stir. Stir until well combined.

    Step 4. Serve. Add the garnishes and serve!

    Top Tip

    Keep the glasses and mango juice nice and chilled ahead of time for best results.

    Serving Suggestions

    Serving this drink with the marinated mango garnish and lime slices makes it perfect for summer-themed parties and backyard get-togethers.

    • I suggest pairing it with a main dish such as grilled kimchi chicken thighs, blackened chicken or halibut tacos.
    • Creamy potato or macaroni salad for a side.
    • If you only plan on serving appetizers, these carne asada (grilled meat) nachos or bison sliders would be amazing.

    Ingredients
     
     

    • 3 tablespoons dark rum
    • 2 teaspoons lime juice - freshly squeezed
    • 2 teaspoons agave nectar - or to taste
    • ยฝ cup mango juice - 100% with no added sugar
    • 1 teaspoon fresh ginger - finely grated
    • ice
    • grilled mango mini skewer1 + lime wedge or slice - optional garnish

    Instructions
     

    • Fill a cocktail glass with ice.
    • Add the dark rum, lime juice, agave nectar, mango juice and ginger.
    • Stir until combined well.
    • Add the garnishes. Serve!

    Notes

    1. Use my grilled mango recipe for the garnish. Instead of the full size skewers, use mini skewers for this drink.
